Ingredients:
For the cookies:
8 ounces very soft butter
½ cup powdered sugar
1 teaspoon vanilla extract
1 ¾ cups all-purpose flour

    1 cup (227g) unsalted or salted butter
    1 cup (220g) packed light or dark brown sugar
    40 salted saltine crackers (about 1 sleeve)
    1 pkg (270g-300g) milk or semi-sweet chocolate chips
    additional toppings like nuts, candy or sprinkles (optional)

  • Step 1. Preheat oven to 350F. Line a large baking sheet with heavy duty aluminum foil (if using regular foil, spray with non-stick cooking spray for easy removal). Spread the crackers out on the foil in a single layer and fold up the edges of the foil to box in the crackers. Set aside.
  • And then, In a small saucepan, melt the butter and brown sugar over medium heat on the stovetop. Bring to a boil. Reduce heat and simmer for 5 minutes (set a timer), stirring constantly. Quickly pour over the crackers and spread to cover completely.
  • Step three, Bake for 5 minutes in the oven. Turn off heat. Remove from oven and immediately sprinkle the chocolate chips on top.

    3 eggs
    2 cups sugar
    3/4 cup butter softened
    1 teaspoon vanilla

  • Step number 1. Preheat oven to 350 degrees. With a mixer, beat the eggs with the sugar until slightly thickened and light in color, about 5-7 minutes. The mixture should almost double in size. The eggs work as your leavening agent in this recipe, so do not skip this step. This mixture should form a ribbon when you lift the beaters out of the bowl. Add the butter and vanilla; mix two more minutes. Stir in the flour until just combined. Add the cranberries and stir to mix throughout.
  • Step 02, Spread in a buttered 9x13 pan. (This pan is my favorite!) Bake for 40-50 minutes, or until very lightly browned and a toothpick inserted near the center of the cake comes out clean. (I baked mine for 43 minutes.) Let cool completely before cutting into small slices. I cut mine into fairly small pieces, about 1"x2", so that they could be easily eaten at a party. Enjoy!

    2 cups (340g; 12 ounces) whole unsalted almonds*
    1 cup (230g; 8 ounces) unsalted butter, cubed

Spread the almonds onto the sheet and bake for 15 minutes, stirring them around twice during that time. Toasting the almonds brings so much flavor to the toffee. Remove from the oven, allow to cool, and set 1 cup aside. Chop up the other cup of almonds nice and fine. Or pulse in a food processor a few times to break them up. These will go on top of the dark chocolate.
